Einkorn Pancakes Recipe

You're gonna love these Einkorn pancakes. They are so light and fluffy and made with all-purpose einkorn flour from Einkorn.com. Einkorn flour works and tastes a lot the same as the all-purpose flour you typically buy at the store, however it is an ancient grain that is much easier for us to digest.

Since it doesn't have as much gluten as regular flour, it takes a little longer to absorb liquids so you will need to let the batter sit for about 10 minutes before you cook the pancakes. Just make the batter up as you would with normal pancakes, let it sit for 10 minutes, and then quickly stir it again before you cook the einkorn pancakes.

This buttermilk pancake recipe is also great to use to make sourdough discard pancakes. Just add 1-2 tablespoons of discard sourdough to the batter and you'll be amazed by the flavor.

Einkorn Flour Pancakes Ingredients

  • All-Purpose Einkorn Flour - you can order Einkorn flour online. It's an ancient grain that isn't gluten-free, but is easier on our digestive systems so is often suitable for those with a gluten intolerance.
  • Sugar - this recipe calls for white granulated sugar.
  • Baking Powder and Baking Soda - these help keep the pancakes super light and fluffy.
  • Salt - sea salt works great.
  • Butter- you can use salted or unsalted butter, depending on what you typically use in your pancakes. It should be melted before mixing into the batter.
  • Buttermilk - you may need to add a little more or less depending on how fluffy or thin you like your pancakes to be.
  • Eggs - any kind of large eggs will work great.

How to Make Buttermilk Einkorn Pancakes

  1. Mix the dry ingredients. In a medium-sized mixing bowl, combine the einkorn flour, sugar, baking soda, baking powder, and salt. Mix with a whisk making sure all the "dry" ingredients get mixed in.
  2. Combine the wet ingredients. With another mixing bowl, combine the melted butter, buttermilk, and eggs. Whisk until all the ingredients are combined.Add the buttermilk mixture into the flour mixture and stir until well mixed, but leave some lumps. Do not overmix.
  3. Rest the batter. Let the batter sit for 10 minutes, then add a little more buttermilk if you want thinner pancakes. (The Einkorn flour takes a little longer to absorb the flour than regular all-purpose flour so the batter will become thicker during the 10 minutes)
  4. Cook the pancakes. Heat a pan or griddle over medium heat, then spray with nonstick cooking spray.Pour about ½ cup of batter onto your hot griddle at a time. Cook the pancakes until there are bubbles popping on top and the underside is golden brown. Flip the pancake over with a spatula and cook the other side until the buttermilk einkorn pancake is golden brown.
  5. Serve. Continue until all batter has been cooked, then serve with your favorite syrup, butter, or jam. Enjoy!

So I have a love/hate relationship with pancakes, especially in the past when I had to use gluten-free flour blends, they were the worst! And no matter how hard I tried they would come out thick and dry and crumbly. Those were the “dark ages” in my baking life. Then my family started to use enkorn and I found your recipe, and let me just say I will never ever use another pancake recipe in my life! They are seriously the best pancakes I have ever had! I think what caught my attention was the perfect balance of acid and sugar, not to mention the fluffy light texture. Thanks so much for the recipe, it has made me love pancakes again!

Holy Cow!!! These are seriously THE BEST PANCAKES I’ve ever had. Incredible. I used cultured buttermilk that our Whole Foods carries. I’m interested to see how these will be with homemade buttermilk from milk and lemon juice.

Made one change...I separated the egg yolks and the whites adding the yolks with the buttermilk and melted butter to the dry ingredients. I whipped the egg whites to soft peaks and folded them into the pancake batter. Very light and fluffy. Delish.

FAQs

Can I replace all-purpose flour with einkorn flour? ›

Einkorn Flour absorbs less water and at a much slower pace than all purpose flour. Because of this, a great conversion rate in recipes is to use an extra 1/4 cup of einkorn for every 1 cup of all purpose.

What is the difference between whole grain einkorn and all purpose einkorn? ›

The whole grain is just the berries ground into flour with nothing removed. The all-purpose flour has had the bran and the germ removed. So it's a white flour and is much less nutrient dense and flavorful than the whole grain flour.

Does einkorn flour need more water? ›

Einkorn may be substituted cup for cup with regular whole wheat flour in some muffin, pancake, cakes, and cookie recipes. However, sometimes the amount of liquid in the recipe needs to be reduced by roughly 15-20%. Einkorn absorbs liquids slower than modern wheat.

What is the trick to making pancakes fluffy? ›

Incorporate mayonnaise into the batter

Baking soda ultimately makes the pancake rise, so giving it a boost will help to ensure an even fluffier finish. Additionally, mayonnaise has egg whites, yolks, and oil, which contain fat that will prevent the pancake from being weighed down by a heavy batter.

Why is einkorn flour so sticky? ›

While einkorn is high in protein, its gluten properties aren't the same as modern wheat. This results in a dough that can be overly sticky and wet by the end of bulk fermentation.

What to know about baking with einkorn flour? ›

Einkorn's gluten is weaker than normal flour, so when you let a loaf of bread made with dry active yeast rise, don't let it proof to the old standard “let the dough rise until it has doubled in size.” If the dough rises too much, it will deflate in the oven.

Does einkorn flour go rancid? ›

Properly stored, einkorn berries (unmilled) last for years, making it more affordable to stock up. Flour oxidizes and loses its nutrients over time. If not kept properly, flour will go rancid. Milling einkorn flour at home is easier than ever, thanks to modern electric countertop mills.

What is another name for einkorn flour? ›

The domestic form is known as "petit épeautre" in French, "Einkorn" in German, "einkorn" or "littlespelt" in English, "piccolo farro" in Italian and "escanda menor" in Spanish. The name refers to the fact that each spikelet contains only one grain.

Is einkorn flour inflammatory? ›

Typical modern wheat can contribute to inflammation and gut damage. In lab studies, einkorn bread actually had anti-inflammatory properties. It's also high in polyphenols and antioxidants. If you're looking for an easily digested bread, sourdough may be the best option.

Why does einkorn not work for baking as well as modern wheat? ›

If you are grinding your own Einkorn, do not expect it to rise as high as modern white bread. This is true with all whole flour breads. Because Einkorn has a completely different type of Gluten than modern wheat, it does NOT need to be kneaded very long at all.

Can you make a roux with einkorn flour? ›

A: Yes. For things like roux, Einkorn (along with fat) will thicken juices. Breads and the like take a bit more practice as this wheat (not being hybridized and processed within an inch of it's life) is not the light and fluffy stuff we're used to in processed high gluten US wheat.

Should you sift einkorn flour? ›

Sifting makes the einkorn flour much easier to mix into the other ingredients without lumps forming. This is especially important for einkorn flour because it is slower to absorb the liquids in the recipe than regular all-purpose flour and you can end up with dry flour clumps if not careful.

What makes restaurant pancakes taste so good? ›

Restaurants tend to use real, farm-fresh eggs and real milk when making their pancakes, which as you might guess, adds to a richer, higher-quality eating experience.

Do pancakes taste better with water or milk? ›

Can I Use Water Instead of Milk in Pancakes? Milk adds both flavor and texture to pancake batter, so if you are looking to make pancakes without milk, a simple swap to water doesn't always do the trick. For pancakes made without milk, you'll want to add some flavor through melted butter and vanilla extract.

How does Gordon Ramsay make perfect pancakes? ›

Instead of using a boxed pancake mix, Gordon mixes his own ratio of flour, milk, and eggs with a whisk before letting it sit for about 15 minutes to thicken. Then, using a hot nonstick pan and cooking spray, he'll spoon about a ladle full of the pancake batter mixture onto the center of the pan.

What makes pancakes fluffy and helps them rise? ›

Pancakes and waffles typically both contain baking soda, which causes them to rise. As soon as the baking soda is combined with the wet ingredients (which contain an acidic ingredient, like often buttermilk), it starts producing carbon dioxide gas bubbles that cause the batter to rise.
