FAQs

How do you keep corn muffins from falling apart? ›

Put in an extra egg yolk.

Adding an egg yolk to your cornbread will help hold its shape while you're cutting and serving it. You can add a yolk even if your recipe doesn't call for any eggs at all--just put it in with the other wet ingredients.

Can you add sugar to cornbread mix? ›

I love to bake from scratch, but I have often used packaged cornbread mix, adding a little extra something to the ingredients and making the finished product taste more homemade. My favorite thing to add is sugar—a hot topic for another conversation!

How do you keep cornbread muffins from drying out? ›

The Best Way to Store Muffins

Let them cool for no more than five-to-10 minutes in the pan, then transfer them to a wire rack to finish cooling completely. STEP TWO: Line an airtight storage container with paper towels. The paper towels will act like a “sponge,” absorbing the moisture the muffins emit as they age.

What makes cornbread muffins rise? ›

The air spaces are created by bubbles of gas (mostly carbon dioxide) produced within the batter during the baking process. Ingredients that produce these bubbles are called leavening agents. In "quick breads," which have no yeast (and don't require hours for dough to rise), the leavening agent is usually baking powder.

What does adding an extra egg to cornbread do? ›

The yolk will make the texture more dense and smooth, a bit brownie-like, while the fact that your original batter was too thick means that the additional liquid will help the baking powder achieve better leavening, giving you an airier texture.

What ingredient keeps muffins from falling apart? ›

How do you keep muffins from falling apart? It's gluten. See, to a baker, gluten holds the whole world together.

Which cornbread mix is not sweet? ›

Martha White Cotton Country Cornbread

It's flavor is classic, without sweetness or too much saltiness, but it's a white cornbread. Don't expect it to turn golden yellow the way other cornbreads might.

What is the difference between Southern cornbread and sweet cornbread? ›

She notes that Northern cornbread is sweeter, lighter, and more cake-like than Southern cornbread. Not surprisingly, it includes sugar (or molasses, in the earlier centuries), unlike traditional Southern cornbread.

Why is Southern cornbread not sweet? ›

The most common theory is a change in cornmeal itself. Until early in the 20th century, Southern cornmeal was made with sweeter white corn and it was water-ground. When industrial milling came along, that changed. The steel-roller mills used yellow corn that was harvested before it was ripe, so it had less sugar.

What keeps muffins moist? ›

Oil & Butter: Oil produces a moist, tender muffin. Combine with melted butter for extra fat, moisture, and a little flavor. Milk: Milk adds plenty of moisture and lightens up the crumb. I usually use whole milk or buttermilk.

What can I add to muffins to make them less dry? ›

Keep Wet and Dry Ingredients Separately

First, mix the wet ingredients together in a bowl and then mix the dry ingredients in another to prevent the muffin mix from being over-mixed. Some recipes will even recommend adding in greek yogurt or buttermilk to bump up the moisture.

Why do my cornbread muffins stick to the paper? ›

Some batters are very high in sugar, which can caramelize against a paper wrapper (or a metal pan, for that matter) and stick, while others are simply very delicate in texture. Batters that are relatively low in fat also tend to stick more than higher fat recipes.

What is the secret to high muffins? ›

The idea here is to start the muffins in a very hot oven for just a short amount of time. This activates the baking powder and allows the muffins to shoot up in height quickly. We then turn the heat down and continue to cook for longer. This is done to avoid over-browning and overbaking.

Should you let muffin batter rest? ›

Rest the Muffin Batter

The first, most hands-off way to make your muffins pop (literally) is to let the batter rest. Make the batter, cover the bowl with plastic wrap, and let the batter rest at room temperature for about 1 hour. If you're short on time, just 30 minutes can make a difference.

Why are bakery muffins so much better? ›

The best bakery-style crumb muffins start with cake flour

Cake flour is more finely ground and has less protein, which leaves the muffins with a fine, light crumb and soft texture. Using cake flour is an easy way to avoid heavy, dense muffins even if you end up stirring just a bit too much.

Why do my Jiffy corn muffins fall apart? ›

Why Is Jiffy Mix So Crumbly? The recipe on the box doesn't give the batter as much moisture as I like in my cornbread, which is why it can sometimes turn out crumbly. Adding in the sour cream and vegetable oil makes a huge difference and makes the best moist cornbread.

Should you soak cornmeal before making cornbread? ›

Soaking the cornmeal in buttermilk for a few hours, or even overnight, tenderizes the large grains of cornmeal, making the bread more moist and tender. This step is optional, however, and the bread is still delicious without the soaking step.

What is the best way to store cornbread muffins? ›

If your cornbread muffins are made with non-perishable ingredients, they can be stored in an airtight container at room temperature for up to 2-3 days. If you are unsure whether your cornbread muffins should be refrigerated or not, it's always best to err on the side of caution and refrigerate them.

Why do corn muffins stick to paper liners? ›

Most muffin recipes contain oil. The amount of oil in your recipe will affect how much they stick to the liner. Removing the liners while the muffins are still warm helps. You could spray your liners with non-stock spray.
